  1. Quick question about Question #2 on the “Bread Quiz”. It states within the assigned reading that self-rising flour should never be used when baking yeast breads. On the quiz, the correct answer that is highlighted is “Self Rising Flour.” Unfortunately, neither of the other two options fit with the readings, which state that whole wheat bread is the best flour to use when baking yeast breads.
