lentil rice casserole

IMG_20140729_091819In crockpot put the following:

  • 1 # package lentils
  • 1 c brown rice
  • 4 T minced, dried onions
  • 6 c water with 2 T chicken bouillon
  • 1/2 tsp oregano
  • 1/2 tsp thyme
  • 2 T minced garlic

Cook on high for 2-3 hours until liquid is dissolved or low for 4-6 until dissolved.

Place a scoop on a whole wheat tortilla and roll up.IMG_20140729_160828We serve this with shredded lettuce, salsa, and sour cream

  2. Does this freeze well? Trying to make meals for a military family. (My sons family). My Granddaughter has leukemia so all their money is spent on her treatments. Of corse we help out and my husband jokes that retirement would be boring anyway. So I have Two freeze dryers, two pressure canners, and three instant pots going plus my crockpots busy trying to get enough meals to make the trip worth while. So your quick in easy recipes have really been a blessing. Thank you so very much!

    1. Yes, what would you do with your time:) It is so much nicer to stay busy and serve. That is such a blessing. God is doing a great thing through you. This is an easy meal to throw together for the crock and cook for hours. I have not froze mine, rice is just okay frozen. I’d just make it as needed:) You are doing a great thing!

    have you tried this in the pressure cooker? What do you think the cook time would be?

  4. I’m going to make this. But in your youtube video where you made this, you added something else. What was it? Cheese? I’m thinking about adding bell peppers and/or jalapeƱo peppers to it.

    1. Yummy…..hmmm I am trying to think what I added to it. This is the original recipe and we may have tweaked it based on my forgetfulness:) Yes add some peppers it will be good. This is a great way to make lentils, we love it.
