I am a 63 year old grandma. Here on Guam we are given food items for low income families especially senior citizens, we call Manamko. I received bags of red beans and have seen your post on them but I only have pork or chicken. Can I cook them the same way? We use a lot of coconut milk on the island and I am trying to cut back on that. Not really healthy but do use it once in a while. Can you give me suggestions?
I say try it in small quantities. You can make red beans and rice and use the pork or chicken. We make a lot of haystacks..Rice on bottom and then top with red sauce—red beans–meat–chili type topping and then add lettuce, cheese, tomatoes, any type of toppings that you enjoy. Can you use regular milk instead of coconut milk? I always thought that the coconut milk is better for you than regular milk?
