homemade canned chili beans

IMG_20140718_072258I cooked in my large roaster pan 4 -1 lb packages of red beans according to package directions. Drained,

I then added:

  • 2 small cans of tomato paste
  • 2 T salt
  • 2 T chili powder
  • 1 T paprika
  • 2 T onion minced
  • 1 clove garlic minced
  • 1 cup sugar
  • 2 T mustard
  • 4 cups water

I turned my roaster on low and cooked overnight.  The beans turned soft and absorbed the chili flavor well.  I then placed into containers and put in the freezer for future meals.

    Did you use dry mustard powder or prepared mustard in this recipe? I just discovered canned chili beans and would love to make my own.

    1. Yes but I believe you just make them dry and then the pressure makes them regular…haven’t done it in a long time.
