Egg casserole recipe

My family likes breakfast foods.  We usually make a breakfast dinner once a month.  This egg casserole is picked most frequently.  Tastes great and reheats the next day in the oven or on the stove top nicely as well.

  • 1 lb ground sausage
  • 1 small onion, chopped
  • 2 cloves of garlic minced
  • 12 eggs
  • 1 cup milk
  • 1 can of cream of mushroom soup
  • 1 can sliced mushrooms
  • 1 can of potatoes chopped
  • shredded cheese

Brown the meat and onion.  When cooked add garlic, mushrooms and potatoes.

Beat the eggs, milk, and can of cream of mushroom soup

As some of you may know, we do not use a microwave at all.  To keep foods warm we place in a casserole dish and put in the oven.

  2. I have a question about your hashbrowns with cheese browned, add a cracked egg, top with meat. Do you think they could be made in cup cake paper liners?

    1. I have not tried it that way, it might make it a little smoosher not crispy but still tasty. I say give it a try and let me know:)
