hamburger cookies a fun large family food idea

This is a great fun treat to make.  Usually once a year we make this for some occasion.  We had a fall party that we ended up making these for this year.  They are fun, cute, and super easy to make.

You will need the following ingredients:

  • box vanilla wafers
  • container of vanilla frosting
  • yellow, red, green food dye
  • coconut
  • mint thin type cookies–i believe they are called grasshoppers

What you first do is mix some green food coloring in with the coconut.  Mix around and it will spread the dye to all of the coconut.2013-11-11_00067 Then split your frosting into two bowls.  Add yellow to one bowl and mix thoroughly.2013-11-11_00068 To the other bowl mix in red food coloring and mix thoroughly.2013-11-11_00069 To assemble the cookie, spread some red(ketchup) frosting on one half of the vanilla wafer.2013-11-11_00070 Spread some yellow frosting on other half of vanilla wafer, dip into the coconut for your lettuce.2013-11-11_00066Then place a chocolate mint cookie on top of the coconut.2013-11-11_00072Take your two halves and put them together and you have your hamburger cookie. You can make a bunch of these in no time flat. They keep well in a covered container.2013-11-11_00073

 

lasagna in the crockpot a large family food idea

 

Lasagna is a family favorite that is usually on the menu once a month.  I like to make this dish in the summer by putting it in the crockpot to avoid heating up the house.  But for days when I am busy it is nice to have in the crockpot to enjoy a fuss free meal.

To make the sauce you will need the following:

  • Maryons spaghetti sauce recipe
  • 1-16 oz container of ricotta cheese
  • 2 cups mozzarella cheese
  • 1/2 cup parmesan cheese
  • 1 pkg lasagna noodles–cooked  and sitting in cold water to avoid sticking

To begin, make your spaghtetti sauce.  I like to do ours homemade with our frozen pureed diced tomatoes2013-11-04_00074

In a small mixing bowl combine the ricotta cheese, mozzarella cheese, and parmesan cheese.2013-11-04_00080 Mix until combined.2013-11-04_00082 By now your sauce is good and hot and cooked thoroughly.  If you are using jarred spaghetti sauce,  I would recommend adding some tomato sauce, tomato juice, or some sort of extra liquid as jarred sauce is often quite thick and your lasagna will turn out mushy.  2013-11-04_00083 Layer in your crockpot the following:

  • 1/3 sauce
  • noodles
  • 1/3 cheese mixture
  • noodles
  • 1/3 sauce
  • noodles
  • cheese mixtue
  • noodles
  • rest of sauce

It works out pretty nicely if you get a box of broken noodles, as you can just layer them to fit into your crockpot.

I like to sprinkle some parmesan cheese on the top of my lasagna.  I put this on low for about 2 hours.  If you really need to stretch it you can put on warm for 4 hours.
