Pumpkin pie baked oatmeal

  • 1 (15 oz. can) pumpkin puree
  • 1/2 cup brown sugar
  • 2 tablespoons maple syrup
  • 2 large eggs
  • 2 tsp pumpkin pie spice
  • 1/2 tsp salt
  • 3/4 tsp baking powder
  • 1 tsp maple flavoring
  • 1 1/2 cups milk
  • 2 1/2 cup old-fashioned oats

IMG_20141119_134846combine pumpkin, sugar, syrup, eggs in mixing bowl and mix.

Add the rest of the dry ingredients and mixIMG_20141119_135220Pour into a greased 9 x 13 baking pan.  Bake at 350 for 30 minutes or you can put in your refrigerator overnight to bake in the morning.

 

IMG_20141119_135406Serve with milk, a dollop of whipped cream, or maple syrup.  Delicious served warm, or cold out of the refrigerator
