Poor boy subs recipe

Nothing beats homemade subs for a nice family picnic.  These are a great alternative to the traditional meat, cheese, and bread combination.  Try some for your next picnic.  Note you can also prepare these beforehand and then freeze them.  They thaw nicely and then you bake them in the oven.

In a small mixing bowl combine 1 pkg cream cheese, 1/2 stick butter, 2 T minced garlic, and 2 squirts of mustard.

DSCN2096 This is your sauce that will be spread on your breadDSCN2097 For my sub buns, I use the italian loaves from Meijer, but you can use Hoagie buns, or even regular hot dog buns.DSCN2098 Spread one half of the bread with your sauce mixture.DSCN2105 Add your favorite meats to it.  We do one with chicken breast, salami, and provolone cheeseDSCN2106 The other one we like ham, salami, and swiss cheese.DSCN2107 Close up and then wrap it in tin foil.  Place in 350 oven for about 30 minutes.  You want your cheese to melt.  To serve you can then add shredded lettuce, tomatoes, mild pepper rings, and pickles.  DSCN2108

Club sandwiches

This has become one of  our families favorite sandwiches to make and take on the go. Simple and easy to make.

You will need the following ingredients: (amounts depend on how many you want to make)

* Bread, toasted
* Miracle whip
* Turkey or chicken lunch meat
* Cheese slices or we use shredded cheese
* Pickles
* Turkey bacon, cooked
* Tomatoes if in season

My daughter, who is the club sandwich maker in our household makes them as follows:

First start with layer of toasted bread, spread with miracle whip and topped with lunch meat.

Top with another layer of toasted bread and miracle whip

Lastly top with another slice of bread, toasted, with miracle whip.

Mexican grill cheese

This is a super fast, healthy lunch that we make quite frequently around here.  You can add a variety of different fillings like chicken, leftover roast, beef, anything you may have on hand.  We make it plain and simple.

You will need the following:

  • refried beans
  • cheese
  • whole wheat tortillas

Spread refried beans onto a tortilla and top with cheese.  Place another tortilla to make a sandwich.
