1/2 onion
1 clove garlic
1 tsp sea salt
1/2 tsp curry powder
1 pinch cayenne pepper
1 1/4 c vege broth
1/2 c baked chopped sweet potato
1 cup chopped kale
1/2 c canned coconut milk
1 tsp brown sugar
In large pot, heat oil and saute onion until soft. Add garlic and spices and cook for a minute. Then add broth and add sweet potato chunks. You can either transfer to a blender to puree this or work with a potato masher and smash it It will basically be like mashed potatoes. After smooth, add chopped kale, coconut milk, and sugar.
This is very good. I place mine in individual serving freezer containers for quick lunches for myself.
