I had received a basket full of fresh beets from my husband’s work and I didn’t really know how to prepare them. I like to eat canned ones but had never had them fresh. My new friend Kayleigh is vegetarian and she told me how to make this—-thanks Kayleigh.
You can make this salad as big as you would like.
- Peel and shred your beets
- Shred some carrots
- Shred some cabbage
- cut some green onions
- add a handful of sliced almonds
- add a handful of cranberries
- top it with poppyseed dressing
