loaded homemade potato fries

2013-12-25_00094We like to make oven fries around here to go with our hamburgers and hotdogs.  We also like to make a loaded baked potato topped with cheese, bacon, and green onions.  So why not merge the two together and have loaded potato fries!!!

These were gobbled up the first time that we made them.  We make them the same as we make the oven fries.

  •  We start with some potatoes and slice them into slices.
  • coat them with some oil–olive or vegetable oil–do this lightly
  • Place on a foil lined cookie sheet–trust me will save you from scrubbing.
  • bake at 400 degrees for about 30 minutes.  Turn them over about halfway through.  You can test their doneness and see if you want them more crispy or if you want them softer.
  • After they are cooked you can add your toppings.
  • We pour nacho cheese over top, then sprinkle some bacon bits, and put back in the oven for a few minutes to heat through.
  • Top it off with some green onions.

 

 

double chocolate crumble bars recipe

This recipe does take some time to prepare, not alot but more than the mix up your cookies and throw them into a pan recipe.  But they are worth making and waiting in between the layers.  Each layer adds a nice texture to the cookie bar and tastes wonderful.

You will need the following:

  • 1/2 c butter or margarine
  • 3/4 c sugar
  • 2 eggs
  • 1 tsp vanilla
  • 3/4 c flour
  • 1/2 c chopped pecans
  • 2 T cocoa
  • 1/4 tsp salt
  • 3 cups mini marshmallows–1 small bag
  • 1 c chocolate chips
  • 1 c peanut butter
  • 1/2 pkg of rice krispy cereal

In a mixing bowl mix the following until blended:  margarine, or soften butter sugar, eggs, vanilla, flour, cocoa, salt, and pecans.

  • Spread into a jelly roll pan or you can use a 9×13

I like these to be a thinner flatter bar so we put ours on a jelly roll cookie sheet.  Spread out evenly on pan.

Bake in 350 for 10 minutes.  2013-11-11_00075Remove from the oven and immediately sprinkle the marshmallows across the top evenly.  Return to the oven and bake for about 3 minutes more.2013-11-11_00076I have actually let these cook a little longer and they get “toasted” on their tops, it makes the cookie bar taste more like a smore. Take these out and let them cool.  They are just going to “puff” up a bit.2013-11-11_00077While that is cooling you can mix  up your top later.  In a small saucepan melt the chocolate chips and peanut butter. 2013-11-11_00080Add your rice krispy cereal to the chocolate peanut butter mixture or vice versa:)
