This is a definite recipe that we make every month in our household. It is very easy to make and you can make a lot of it for cheap. The recipe says 2 pkgs of tortillas and that it fits in a 9 x13 pan, we actually make it in a 9×13 pan and 1 square pan. That makes plenty for our large family. If you want a smaller version just use one pkg tortillas and use about half a jar of salsa. You can then fill your burritos a little more full and it will make a heartier meal.
We usually make a side of black beans and rice. Also a side of nacho cheese and tortilla chips.
Burrito casserole for large family
- 2-pkg 8-10 count whole wheat fajita tortillas
- 1 can cream of mushroom soup
- 1-16 oz container of sour cream
- 1 lb hamburger, cooked
- 1 pkg taco seasoning
- 1-16 oz can refried beans
- 1-24 oz jar salsa
- 2 cups shredded cheese
- toppings, lettuce, tomatoes, salsa, sour cream
Mix the cream of mushroom soup and sour cream in a small mixing bowl
In a separate bowl, mix the cooked hamburger,taco seasoning, refried beans, and salsa
In a 9×13 pan spread 1/2 of your cream mixture on the bottom of it.
Place a scoop of the meat mixture in a tortilla and then roll it up
Spread the remaining cream mixture over top of the burritosSp
Sprinkle with cheese and bake in 350 oven for 30 minutes until bubbly.
Serve with lettuce, chopped tomatoes, salsa, sour cream or ranch.
