Easy Gingerbread muffins
- 2 1/2 cups all purpose flour
- 3/4 cup brown sugar
- 1 tsp baking powder
- 2 tsp ground cinnamon
- 1 tsp ground ginger
- 1/4 tsp cloves
- 1/4 tsp salt
- 2 eggs
- 1 tsp maple or vanilla extract
- 1/3 cup (vege or coconut)
- 5 Tbsp honey
- 2 Tbsp molasses
- 1/2 cup milk
- Powdered sugar, for garnish
Preheat oven 350. Grease 12 muffins cups. In a large bowl combine all of the dry ingredients. In another bowl combine the eggs, extract, oil, honey, molasses and milk. Add the wet to the dry and mix to just combined. Evenly distribute in muffin cups. Bake for 30 minutes or until done. Garnish with a dusting of powdered sugar.
