Chocolate Eclair Cake

This is my 2nd oldest daughters favorite dessert.  It is very simple to make and tastes so wonderful. Scroll down for complete recipe.2014-03-30_00027

In 9 x 13 pan, grease and then place one layer of graham crackers on the bottom.2014-03-30_00028

In medium sized mixing bowl add 2 pkgs instant vanilla pudding and 3 cups of milk.  When combined add 1- 8oz container of Cool whip.2014-03-30_00030

Place 1/2 of the pudding on top of the graham crackers.2014-03-30_00031

Spread carefully.

Top with a second layer of crackers.2014-03-30_00033

Spread the remaining pudding mixture on top of the crackers.2014-03-30_00034

top with a final layer of graham crackers.

Place your dish in the freezer until frozen.  Then you are going to melt your can of chocolate frosting, just a tad so that it spreads easily.  If you have a microwave I assume you can do this in a few seconds.  I do not have one so I placed mine in a glass bowl with some water and set it in the oven at 350 for about 5 minutes.  I stirred it to make sure it was a good consistency.

Then I poured it over top of my almost frozen cracker dessert.2014-03-30_00046Spread it carefully. Then refrigerat it overnight.  You can also put in the freezer and serve it that way, we like both ways.  2014-03-30_00049

For the recipe you will need:

  • about 1 pkg of graham crackers
  • 2 pkg of instant vanilla pudding
  • 3 cups of milk
  • 1-8oz container of cool whip
  • 1 container of chocolate frosting.
