chinese cabbage salad

  • 1/2 medium head of cabbage shredded—do this in your food processor
  • 4 green onions, chopped
  • 1/2 c sliced almonds
  • 2 T sesame seeds
  • 1 pkg ramen noodles, chicken flavor

Dressing:

  • 2 T sugar
  • 1/2 c oil
  • 3 T vinegar
  • 1/2 tsp pepper
  • 1 pkt flavoring from chicken ramen
  • dried cranberries or raisins, optional

In a small saucepan, mix 1/4 c sugar with 1/2 c almonds.  Over low heat, cook until sugar melts to a syrup and mixture is nicely browned.  Stir constantly, as it burns easily!  Sprinkle cooked mixture on waxed paper to cool.  When coo, break up and set aside.

Mix in bowl, the cabbage, sesame seeds, and onions.  Just before serving stir in broken Ramen noodles and candied almonds.  If you like cranberries you can add 1 cup dried ones.  Shake dressing ingredients in a closed jar and pour over salad.  Toss lightly to coat and serve.
