- 1 package mild ground sausage
- 1 bell pepper, chopped
- 1 cup onion chopped
- 3 T flour
- 2- 32 ounce cartons chicken broth
- 1/2 (32 ounces) package frozen cubed hash browns
- 1 cup frozen corn
- 1 (16 ounce) package processed cheese product, cubed
- 1 cup sour cream
In large pan, cook sausage, onions, and peppers until sausage is brown and crumbly. Add flour, and cook over medium heat for 2 minutes. Gradually stir in broth, hash browns and corn. Bring to a boil. Reduce heat and simmer for 10 minutes. Stir in cheese until melted; stir in sour cream—do not boil.
Serve with sour cream.
That was her original version. What I did is a package of sausage cooked with dried onions. I sprinkled on the flour and then added water (the same liquid amount) and chicken powdered bouillon–to taste. I then added 2 cans of corn and 5 big potatoes cubed up. I boiled that until the potatoes were soft and then I added 1 cup of mashed potato flakes. Just to thicken it a little more. I then added my processed cheese. Mine was frozen, so I just kept stirring it over the course of an hour over low heat. Before serving I added my sour cream. It was so good. Definitely a winner!
