This was the original recipe and I quadrupled it a bunch of times to use up our salmon:)
I can canned salmon, drained 14.3 ounces ( I have become an expert on how to take the bones out of these easily. Just pour out the contents carefully and use a knife to slide up and remove the bones.)
Mix in a bowl the following:
- salt and pepper
- 1/2 tsp Worcestershire
- 5 saltine crackers-crushed
- chopped onion (I used 1 tsp dried)
- 1 egg
- then add the salmon
Mix them all together thoroughly. I then formed them into patties. I heated some oil in a heavy duty skillet and fried them. I flipped them when they were browned. I have learned the less the better in a pan.
Place them on a rack when finished frying. You can do paper towels, but my “southern” friends told me to use a rack it tastes better.
I put them in a large tupperware container and refrigerated them. My guys ate these for days. They loved them.
I mixed up some miracle whip, relish, and salt and pepper for some tartar sauce.
