broccoli cheese soup

For this recipe, we don’t do exact:)  JUst guesstimate:)

 

In food processor or chop them all up…(Foodprocessor is faster) :

  • 1 small onion, or 1/2 large one
  • 1 stalk celery
  • 1 carrot
  • 1 T garlic

saute in oil for couple of minutes over medium heat.

Then add one bag of broccoli florets and enough chicken stock to come about 2 inches above the broccoli.  We add water and use Knorr chicken bouillon.

Let slightly boil until all cooked.  Then add some milk–either heavy cream, half and half, evaporated milk…whatever you have..I add about 2 cups.

Add 2 cups cheddar cheese…like nacho cheese stuff and 2 cups shredded cheese.  If you don’t have the nacho cheese you can use velveeta or even just shredded.

Then always taste your food…need more chicken flavor? then add some more bouillon.

Add some mashed potato flakes slowly in 1 cup scoops.  Let it sit while you stir and see how thick you will like it.  About 2 cups usually.

Serve and eat!
