blueberry oatmeal breakfast cups

Mix in large bowl the following:

  • 3 smashed bananas
  • 3 cups oats
  • 1/2 cup applesauce
  • 1/2 tsp cinnamon
  • 1/2 tsp almond extract
  • 1/4 tsp salt
  • 1/4 cup honey or maple syrup
  • 1 cup fresh or frozen blueberries–I would recommend smashing a bit
  • 2 T coconut oil
  • 3T shredded coconut
  • I mixed in about 1 cup milk to make it not so solid.  That seemed to make it stick together after baking.

Taste it before you place in pans and if you like it then bake in muffin cups 350 -30 minutes
