pineapple and coconut popsicles low calorie

We have been on a popsicle making kick this summer.  I wanted to be able to enjoy some cool refreshing treats to eat along with my children without the guilt.

I came up with these…..Who doesn’t like pineapple and coconut?  So simple, just 2 ingredients…blend and freeze.

Really, that is it…..1 can of coconut milk.  Mine had 90 calories and 80 calories from fat per serving. (5 servings)

and 1 can of crushed pineapple.  Mine at 70 calories and zero fat per serving.  (4.5 servings)

My math shows less than 50 calories per serving, not bad for this delicious tasting treat.

I put them into my blender and mixed them up, poured them into 3.5 ounce containers and placed on a cookie sheet in the freezer, until partially set.  I then added a popsicle stick to them and frozen until solid.  2014-05-18_00001

Once solid, I put them into labeled plastic bags and put them into the freezer.  When I need a treat, I grab one and enjoy, guilt free.2014-05-19_00014
