peanut butter popcorn

2014-03-22_00000We have enjoyed making popcorn gourmet style.  It is so simple and if you are looking for a low calorie craving snack this is it.

Even though from the photo it looks like all kinds of calories, when it is broken up and put into a bowl the high calories get spread around. For serving the amount of chocolate you actually receive is minimal.  A great low cal snack.

You will need :

  • large bowl of air popped popcorn, I make enough to fill 2 jelly roll style cookie sheets about 2-3 inches tall.
  • 1 pkg white chocolate chips
  • 1 cup peanut butter
  • 2 T coconut oil

In a small saucepan, melt the chocolate chips.  In my photo the white chocolate looks brown.  I reused the pan after making milk chocolate popcorn, so our white chocolate was tinted:)  Add the peanut butter and coconut oil and stir until melted.

Pour over top of popcorn , go back and forth and drizzle, coating it evenly.  Sprinkle with Reeses pieces candy.  Let cool.  Break apart and store in covered container.
