Our meals for the week

Good morning, I hope your having a wonderful week. I have been working on scheduling our school day out, working on more writing, and just being a busy mom:)  Trying to be proficient in keeping up with my posts….I did get pictures for the entire week!!  That is an accomplishment, especially if you know how busy meal times are around here.

This is what I made for the week……………….

Remember how my friend and I had gotten a hold of a case of these pizza crusts?  Well this was the last little bit of them that I had in my freezer.  I am trying to be diligent in using up what I have so that nothing gets lost or wasted.  We made these on Sunday.  It is an easy meal for a day when we are just chilling and relaxing.  I opened up a can of spaghetti sauce, added cheese, meats, and some onions.  The younger ones like the macaroni and cheese pizza—that we do with alfredo sauce, cheddar cheese, and leftover mac and cheese.  I topped theirs with bacon bits too–because we had some.

We also made the dessert pizzas that they love.  I had leftover strawberry sauce—from waffles—that you will see we made this week, so I poured that on the cooked crust and sprinkled it with powdered sugar.  I did a cinnamon and sugar mixture over melted butter.  Then the favorite—-peanut butter spread on bottom, topped with marshmallows and chocolate chips.  Then broiled.  It is yummy!

Our next meal was a chinese—steak meal:)  Hmmm, different right??!!?  Well I had some New York strip steaks that the guys liked so I grilled those.  Then I made Chinese dinner for everyone else.  This was all packaged—a treat!  I bought egg rolls, potstickers–Aldi’s has these now, and some stir fry vegetables. I made a pan of rice to go under it. 

This is what the plates looked like for the younger ones.  I did put a few small pieces of steak on their plates, some like it, some didn’t. 

Then I made a big pot of beef stroganoff.  This is easy and we enjoy it. I have made it a bunch of different ways, depending upon what I have. This day I used ground beef.  You can click here for recipe.

Aldi’s had these hamburgers and we decided to try them.  They were way less price than the ones I usually buy at Sams Club and just as good. 

Another easy meal—hamburgers on the grill with baked beans.  I also had a watermelon that I served this with.

This was my meal most nights.  I had my pita bread, topped it with Feta cheese, sliced cucumbers, and this night I had found a jar of this slaw stuff that my friend Danielle had given to me.  It is like a carrot slaw, I guess I would describe it–very good.  Then I steamed some broccoli, cauliflower, carrot frozen vegetables and topped it with a little soy sauce and sesame seed oil.  Easy, quick, and filling.

It was Stephens “real birthday” this week, so we took these treats to church. 

Another night we made sloppy joes and macaroni and cheese.  This was where I had the leftover macaroni from.  For our family I can use 2 lbs of ground beef and 2 cans of sloppy joe sauce.  The macaroni recipe is on the link–instead of Velveeta cheese, I used some nacho cheese that I had frozen from a large can of cheese sauce.

Then it was taco…someday:)  Another easy meal for a hot, busy summer week:)

I made a pan of taco rice.

For our tacos we use

  • ground beef seasoned with taco seasoning
  • refried beans
  • lettuce
  • salsa
  • cheese
  • sour cream

Spaghetti was one of our last meals. This was made in the crockpot with bagged meatballs and our sauce.  Topped over noodles.

   Since I had made too many noodles and I had some leftover chinese vegetables, I decided to make this lo mein noodle.  It was very good.  Aldi’s has these various bottles of marinades and dressings.  We got General Tso, an Asian sweet and sour, a Teriyaki one, and a Hoison sauce.  All very good for inexpensive.  This meal will definitely be something we make again as everyone liked it.

I served all our meals with whatever we had on hand, whether it be some watermelon, some fresh cut up vegetables, or canned vegetables and fruit.  This isn’t the beginning of our month for menu foods so I don’ t have as much fresh things as I did in the beginning. Thank goodness watermelon will stay fresh for a long time.  We can even leave ours on the counter and it will stay good.  I also get that bagged lettuce sticks from Sams Club and that seems to last for weeks in our refrigerator.
