New favorite breakfast–corn tortillas

Hello, hope your having a great start to your day today! I’ve got a great healthy new favorite of ours that I wanted to share with you.

We had our friends come visit us back at the beginning of the year and their family is all gluten free. She did the majority of the cooking because she enjoys that and I don’t mind sharing my kitchen.

We ate pretty much everything gluten free that week and I can honestly say that I felt really great during that time. You know when you get together with people and you always have tons of food to eat and you feel so stuffed because you “feel” like you’ve been splurging all week? I did not feel that way at all. Even though I had eaten more than I typically do, because it tasted so good!!! It was a great eye opener to choose some gluten free meals after they left.

One thing that I really enjoyed was how she made her corn tortillas. We always bought whole wheat flour tortillas and used them for breakfast burritos. I think I have tried the corn tortillas once before and we thought they tasted horribly. It was just that I was making them wrong. I was told to fry them first. So I tried that with olive oil. I felt like they were so greasy and that all I was eating was fat.

My girlfriend introduced me to grapeseed oil. I know, whats that!?!? It is a healthier alternative to your regular frying oil. I was told you are not supposed to fry with olive oil because it can produce toxic chemicals when heated high. A quick search on google goes either way on whether it is true or not. I am not a scientist so I can’t say for sure. I guess it is one of those things that you try for yourself. Me, I usually look at the price. If it is astronomically expensive, I might consider not using it because we still need to eat during the week. This large bottle of grapeseed oil, I found at Walmart for around $5. It was actually cheaper than the olive oil that I was buying at Sams Club.
All I did, was pour about 1-2 T on my griddle and fried up my corn tortillas.  I like they crispy so I do it for longer.  We place them in a bowl until we are ready to eat.

I then make up some Mexican eggs. My girlfriend chopped up every kind of meat and vegetables and put it in the eggs and my children ate it! I was like, wait a minute. Normally its, “There is something green or red in my food.” and they won’t eat it.  But this they ate a lot of. So I chopped up some potatoes, sweet potatoes, onions, kale, and leftover chicken.  I know chicken?!! My most favorite thing to put in eggs.  I think a big key, is chopping them up small. I first cooked the vege and meat mixture in the skillet with a little grapeseed oil and cooked everything until soft.  While doing this, the potatoes got chopped up even smaller. Then I whisked my eggs and milk and cooked it with the vege mixture.

We placed it on a tortilla and added some salsa.  Again, yes salsa!!!!  It is so good.  Try it! I always liked just eggs and the thought of salsa did not sound appealing at all. But I tried it and this is what we have been eating everyday for breakfast. And if you follow along with me, you know I don’t like making breakfast!  I get up and fry  my tortillas every morning. I cooked up a big batch of eggs on Sunday and we have just been reheating some each day.

When you eat these, they are not heavy feeling at all.  Even cooked in the oil, it doesn’t taste “fattening”.  Something to try.  They are much cheaper than flour tortillas and a whole lot better for you.  Grab some at the store this week along with some grapeseed oil.

We also did a batch with chopped up hotdogs.  I didn’t have any leftover chicken but we did have hot dogs.  So I added those all chopped with the same vegetables.  Again everyone ate and loved!  So look in your refrigerator and find any meat scraps and veges.  Fry them up and put on a tortilla!
