garlic beef enchiladas

In a saucepan add the following:

  • 1 pound cooked hamburger
  • 1 medium onion chopped
  • 2 Tablespoons flour
  • 1 Tablespoon chili powder
  • 1 teaspoon salt
  • 1 teaspoon cumin
  • 1 can stewed , diced, pureed tomatoes

Let cook and simmer to mix flavors.

In a separate small sauepan mix:

  • 1/3 cup butter sauteed with 5 cloves minced garlic
  • Add 1/2 cup flour and make a paste

Mix in:

  • 2 cups beef broth
  • 1- 14 oz can tomato sauce
  • 1 Tablespoon chili powder
  • 1 teaspoon salt
  • 1 teaspoon cumin

IMG_20150203_113934To assemble, cover the bottom of a 9x 13 pan with sauce.  Fill mixture into tortillas and roll up.  Set on top of sauce.

Depending upon how gooey you want this, you can top with remaining sauce or just top with cheese.  We don’t like it very gooey, so we just topped ours with cheese.IMG_20150203_114740

Bake 350 for 30 minutes.
