These turned out quite well. As they sit in the freezer the cookie starts to get soft so that it tastes like ice cream sandwiches.
Take 2 chocolate chip cookies and a scoop of ice cream and sit on a cookie sheet to freeze solid. Place in plastic containers in freezer.
