blueberry muffins

  • 5 T butter or coconut oil
  • 1/2 cup sugar
  • 1 egg
  • 2 c flour
  • 3/4 t baking powder
  • 1/4 t baking soda
  • 1/4 t salt
  • 3/4 c yogurt–vanilla flavored or blueberry kefir
  • 2 t lemon juice
  • 1 c frozen blueberries

Mix the lemon juice and blueberries.  Combine all of the wet ingredients and then the dry.  Add the blueberries last.  Bake 350 for 20 minutes
