berry mandarin spinach salad

  • 2 c fresh sliced strawberries
  • 1 can mandarian oranges
  • sliced red onion, however much you enjoy
  • 1/3 c sliced toasted almonds
  • 4 slices crumbled bacon
  • desired amount of torn spinach

dressing:

  • 1/4 c sugar
  • 2 T vinegar
  • 2 T honey
  • 1 1/4 tsp lemon juice
  • 1/2 tsp paprika
  • 1/2 tsp dry mustard
  • 1/2 to 1 tsp finely minced red onion
  • 1/4 tsp celery seed or dried celery
  • dash of salt
  • 1/3 c oil

To toast almond slices, pour into dry skillet and toast over low heat. Stir it continually.  They are toasted enough when you can begin to smell them.  Be careful, as they burn easily.

Mix all dressing ingredients, except oil in a small saucepan.  Heat until sugar is dissolved.  Add the oil and beat very well.  Toss with salad ingredients right before serving.
