Beef Taquitos

I typically make a roast in my crockpot and let it cook until it is falling apart.  That will take hours.  I then shredded it up, with a fork.  Place it in a skillet and mix with refried beans, taco seasoning, onion, and shredded cheese.  We have also added salsa to our mixture. 

We then cook our corn tortillas on a griddle with grapeseed oil.  This oil I have found is the best to make the corn tortillas.  It doesn’t give it a heavy taste, very light and good for you.   I then place some of the mixture in the tortilla and fold in half.  We place on a cookie sheet and bake at 425 until crispy.  Serve with sour cream and salsa.  One of our favorite.  They taste like Taquitos the rolls you buy in the store.  Very good!
