No bake cookies used to be intimidating to me. I am not one to follow recipes to a T. But with these cookies you need to exactly time out how long it boils for so that your sugar will reach the proper temperature to crystallize and then harden to make your cookies firm. Follow exactly and you will have perfect cookies everytime.
- 2 cups white sugar
- 1/2 cup milk
- 1/2 cup margarine
- 3 T cocoa powder
- 1/2 cup peanut butter
- 1 tsp vanilla
- 5 cups quick oatmeal
- 1//4 cup chopped peanuts or shredded coconut
Combine in saucepan over medium heat: sugar, milk, margarine and cocoa powder. Heat to boiling, boil for 2 minutes, stirring constantly.
Remove from heat and add peanut butter, vanilla, oatmeal, and peanuts or coconut. Drop by Tablespoon onto waxed paper. Let set up.
